Pepper Jack Bratwurst Fajitas

We're putting a twist on regular chicken fajitas by using our 100 Calorie Pepper Jack Chicken Bratwurst! This substitution creates a flavorful fajita that can be served as a fun lunch or the main course of your dinner.

Ingredients

  • 1 package 100 Calorie Pepper Jack Chicken Bratwurst 10.7 oz.
  • 1 tsp canola oil
  • 1 medium green bell pepper, seeded and sliced in very thin strips
  • 1 medium red bell pepper, seeded and sliced in very thin strips
  • 1/2 cup chopped green onion
  • 6 s whole wheat or multi-grain flour tortillas, warmed (8-inch)
  • 3/4 cup chunky salsa
  • 3/4 cup shredded crisp lettuce
  • 3/4 cup shredded Mexican cheese blend
  • 1 container low fat sour cream
  • 1 container guacamole
  • 1 package fajita mix, prepared

Directions

Slice sausage in half and then cut each half to make sausage strips that are 1/2-inch wide. Slice strips into 3-inch lengths.

Heat oil in a large, heavy nonstick skillet over medium-high heat. Add peppers and sauté about 2 minutes, stirring frequently. Add onions and sauté for 2 additional minutes.

Add sausage strips and sauté for 2 more minutes, stirring frequently, then mix in the prepared fajita mix. Cook until vegetables are crisp-tender and sausage strips are hot.

Spoon equal portions down middle of each heated tortilla. Top sausage mixture with 2 tablespoons salsa, lettuce and cheese. Add extra toppings if desired and roll up tortillas.
